Peanut Butter Cake - keto, low carb, sugar-free, gluten free
If you are anything like us, there's a special place in your heart for all things peanut butter! This cake is so satisfying on it's own, or take it over the top with some peanut butter frosting!
1 of our "yellow cake" mixes
3 TBSP butter
3 TBSP peanut butter
1 tsp vanilla
Pre-heat oven to 350 degrees and line an 8x8 pan with parchment paper or lightly grease.
Combine butter and peanut butter in a small mixing bowl and gently heat in microwave until JUST softened. Don't over heat, or the mix will cook the eggs once you add them.
Blend the butter and peanut butter until smooth, then add in the eggs and vanilla and stir to combine.
Add in the cake mix, mix until just combined, and spread out into baking pan.
Bake for 14-16 minutes, or until toothpick comes out clean. Allow to cool before cutting.
