Mini Waffles - keto, low carb, sugar-free, gluten free
While we ADORE pancakes, I know many of you have asked for a waffle option, so here it is! Most don't know this, but pancake mix and waffle mix are actually very different, and usually can not be used to make both :) However, we've adjusted the wet ingredients a little to our "Just Like Buttermilk Pancake Mix", so you can finally make waffles too!
What you'll need:
1 pouch of our Just Like Buttermilk Pancake Mix
6 TBSP of water
1 TBSP oil or melted butter
1/2 cup sour cream
1. pre-heat mini waffle maker according to instructions.
2. in a large mixing bowl mix together all of the wet ingredients. Then add in the pancake mix and blend until fully combine and most of the lumps are gone.
3. pour batter into waffle maker, being careful not to over fill. Cook time depends on your waffle maker and how "done" you like your waffles. We used a mini Dash waffle maker and cooked each waffle for 2 full cycles, about 3 minutes.
4. serve immediately, or you could re-crisp these in a toaster oven if serving later.
