Mini Corn Dogs - keto, low carb, sugar-free, gluten free
Nothing brings back memories of the MN State Fair quite like the smell and taste of corn dogs! There's just something about that slightly sweet cornbread paired up with a beef hot dog and lots of ketchup and mustard ;) While I no longer eat the ones from the fair, I can now indulge in a similar flavor at home with these mini corn dogs.
For the corn dogs this is what I used, makes 1 adult serving.
1/4 cup corn(free) bread mix
1T melted butter
1 egg
1 hot dog (I used @applegate brand)
Oil for deep frying
In your smallest pot, heat up some oil for frying. You want the temp to be fairly low. I didn't have a thermometer, but hot enough to bubble/fry as soon as you drop in a tester dollop of the cornbread mix, but bubbling slowly. Kinda like simmering water vs. rapid boil.
Blend together the corn(free) bread mix, butter and egg with a spoon in a small bowl (a deep bowl, or even a mug, would be best).

Cut hot dog into 5 - 6 small pieces. Place a piece into your bowl and cover with cornbread mix. DON'T WORRY IF THE BATTER ISN'T EVEN around the hot dog. The batter will puff up and sort of envelope/swallow up the hot dog while it's frying. Trust me.
Fry each side until golden, then place on a paper towel to drain the excess oil. Allow to cool a couple minutes before enjoying ❤
