Chocolate Pecan Pie Chia Seed Pudding

1.5tbsp chia seeds
1tbsp ground flax
1/3 cup water
1tbsp heavy cream
4-5 drop liquid stevia, or your sweetener of choice.
A touch of vanilla extract

Mix all of this together well and refrigerate for about 10 minutes. Mix again to prevent clumping, and if it's thick enough for your liking, it's ready. If not, stick it back in the fridge for another 5-10 minutes.

Toppings- chopped pecans, sugar-free chocolate chips, or chopped up sugar-free chocolate, and a drizzle of Sukrin fiber gold.

NOTE: the addition of heavy whipping cream seems to speed up the thickening process. I've used almond milk or straight water before, and that will take longer than 10 minutes for it to be thick enough.
