Chocolate Fudge Snowball Cookies - keto, low carb, sugar-free, gluten free
NO holiday cookie tray is complete without some snowball cookies! This one is our take on a chocolate fudge version, and it's so delicious. Thin and crisp exterior shell with a fudgy chocolate cookie interior, and they are so pretty!
Here's what you'll need.
1 fudgy chocolate cookie mix from our shop
4 TBSP butter
2 eggs
2 tsp vanilla extract
sugar-free powdered sweetener, like Lakanto
First, place a strainer over a large bowl, pour the entire contents of the bag of cookie mix into the strainer, and sift out the chocolate chips. Add those to a small bowl, along with the butter, and gently microwave until JUST melted. DO NOT OVER HEAT! Stir well, then add in the vanilla and eggs. Mix with a spoon until just combined.
Add the wet ingredients to the dry, and mix with a spoon until just combined. Refrigerate for 20 minutes.
Pre-heat oven to 350 and line a baking sheet with parchment paper.
Sift some of the sugar-free powdered sweetener into a small bowl.
Using a cookie scoop, portion out some dough and roll into a ball, then place into the bowl of sugar and gently toss until covered. Place on cookie sheet. repeat this process until all of the dough is used, it makes approx. 16-17 cookies. The cookies don't spread much, so it's ok if they are a little close on the cookie sheet.
Bake for about 11-12 minutes, then allow to cool. Most of the powdered sugar will disappear during the baking process, that's totally normal! The first round of dusting is to help it form a crisp outer shell.
Transfer to a cooling rack and lay a sheet of wax paper underneath. Then dust with extra powdered sugar to make them look pretty.
