Caramel stuffed keto chocolate chip cookies - gluten free, sugar free, grain free, low carb

These were so good the last time we made them!! Chewy, gooey, chocolatey goodness!
This makes 9 stuffed cookies

1 package of @kawaiitreatsandeats chocolate chip cookie mix
1 egg
3TBSP melted butter
1 tsp vanilla extract

Something for inside - like Russel Stovers or Chocorite caramel candy, peanut butter cups, protein bars, granola clusters, etc

1. Preheat oven to 350 and grease 9 cavities of a regular sized muffin tin.

2. Open up the cookie mix and pick out most of the chocolate chips, save those  for topping your cookies.

3. Pour cookie mix into a bowl then use your hands to break up the brown sugar really well.

4. Add in the wet ingredients, mix until just combined.

5. Use a cookie scoop to ball out 9 cookies. Pick up 1 ball at a time and press the candy into the middle and cover up with dough. Place into muffin tin and flatten slightly. Repeat with remaining cookie dough.

6. Bake for 10-13 minutes, or until edges are lightly golden and cookies look set.

7. ALLOW TO COOL at least 10 minutes before removing from tin, they are very delicate when hot. Then ENJOY
